For the sponge cake
100 g margarine, soft
60 g sugar
2 Owner
100 g flour
1 teaspoon Baking powder
For the topping
200 g cream, sweet
1 packet of vanilla sugar or 1 tablespoon of sugar
various fruits: e.g. 1 kiwi,
2 strawberries, a handful of mixed berries (blackberries, blueberries, currants and raspberries), ½ bananas, ½ persimmons
Mix margarine and sugar until fluffy. Stir in eggs one at a time. Mix the flour with the baking powder and fold in until everything is just combined.
Pour the dough into the greased RoadBaker baking pan, smooth it out and
bake.
20 minutes on lowest heat.
Allow the cake base to cool in the tin, then turn it out of the tin.
Beat the cream with the sugar until stiff. Spread on the cake base. Cut fruit into wedges/slices. Spread decoratively over the cream.
