500 g flour, type 405
1 bag of dry yeast
1 pinch of sugar
1.5 teaspoons of salt
350 ml water, lukewarm
On the evening before, place the dry ingredients in a large bowl. Mix with lukewarm water. The dough is moist and sticky. Cover the bowl and place it in the refrigerator overnight.
In the morning, turn the dough out of the bowl onto a floured work surface.
